<p>貼心的餐廳把 Tasting Menu 印在一塊麻布上，方便我們保存 &amp; 比照每碟菜式。Central Restaurante 是善於利用當地食材，將傳統口味菜式現代化，而且每道菜都是經過精心擺設才放在客人面前，務求令客人的『視覺』和『味覺』得到刺激。總括來說，這是一頓令人回味的一餐，而且以它的質素來說，價錢是相當不俗。很多時在北美吃到的更貴，而沒有它好。</p>
<p>&nbsp;</p>
<p><strong>Tasting Menu</strong> <strong>:</strong></p>
<ul>
<li><strong>Assorted Breads:</strong>  熱騰騰的特色 Homemade 麵包，用奶油、橄欖油 、紫玉米 &amp; Coca (古柯) 等當地特色產物作材料。</li>
<li><strong>Potato Cubes:</strong>  薯仔 (土豆) 是 Peru 主要食糧，這道是炸原味 &amp; 加入墨魚汁的口味。</li>
<li><strong>Recollection of Scallops &amp; Algae of the South:</strong>  Peru 沿海的鮮帶子，再用魚子包在外面，然後配上海藻汁，非常鮮味。</li>
<li><strong>The Sixty-Mile Fish at 6 Degrees:</strong> 秘魯名菜 Ceviche，用檸檬酸把生魚片醃熟。粉紅色的粉末是由伴菜的小草製成的微酸 Sobert，入口非常清爽，而且很開胃。</li>
<li><strong>Rock Octopus。Purple Char:</strong>  烤至微微焦香的章魚粒，Juciy &amp; 有嚼頭，配上紫玉米汁&#8230; 正!!</li>
<li><strong>Low Andes Waters Shrimp:</strong>  鮮甜的生蝦，加上用 Beets (紅菜頭) 製的微酸蒟蒻麵，絕對增強食慾。</li>
<li><strong>Amazon Yurimagus Famred Arapaima:</strong>  Amazon 河域的特色活化魚，算是世界上最大的淡水魚之一。食質較結實，但不重油脂味，通常在 Lima 較高級的餐廳才能享用到。</li>
<li><strong>Roasted Pork w/ Squid:</strong>  因為我和友人都不吃羊肉，所以改了燒豬腩肉，有點似廣東燒肉，但味道太膻，是全晚我最不喜歡的一道菜。</li>
<li><strong>Suckling Piglet in High Altitude Grasses:</strong> 中國的燒乳豬比較好味，它亦又一股膻味，而且我的那倆片有點太肥，不夠 Crispy。</li>
<li><strong>Bahuaja Nut:</strong>  脆椰絲，非常清香 &amp; Rrefreshing，可以去掉之前滿口膻味 &amp; 油膩感。</li>
<li><strong>Cherimoya: </strong> Amazon 的番荔枝，那清甜的香味，留狂齒頰中久久不散，令我十分回味，一吃上癮。</li>
<li><strong>Petit Four:</strong> 不同口味 &amp; 濃度的巧克力，那圓型軟糖是秘魯特產 Pisco Sour 所製成，全部都甜度適中。</li>
<li><strong>Tea Selection:</strong>  有5款不一樣的混合花茶供選擇，絕對可以減緩飯後的飽膩感。</li>

		<description><![CDATA[有沒有想像過，進入了餐廳，打開 Menu 後只發現一堆當時得令的「主材料」及「配料」名稱，卻沒有一個明確菜式名?!   Menu 上共有四橫行，而每一橫行內有三款不同食材，食客要在每一橫行內挑選一種，然後廚師會跟據食客的選擇而精心炮製屬於「他」的菜式，這就是 Yours Truly 獨特之處！因此很多人慕名而至，試試那種「驚喜無盡」的菜式~  &#160; 經過我那班愛吃的朋友推薦後，我決定大膽試一下它的《Carte Blanche Menu》 《Carte Blanche Menu》其實是 Tasting Menu，大約有 15 ~ 20 道菜，而每道菜的份量大約只是「一口」。它可算是款式較多，而價錢不算開天殺價的那種~    當然因菜式頗多，所以省卻了「自選材料」的一環。 這十多廿款菜中，太部份是走 Fusion 風，以亞洲口味為重，所以對外籍人仕來說驚喜會來得較大&#8230;&#8230;   相反，對我們來說則好壞參半。朋友說比較之下，他喜歡 Regular Menu 所帶來的驚喜多於這個 Tasting Menu。 &#160; 當晚我比較喜歡那配搭新鮮的「茉莉生蠔」，因為太部份 Fusion 菜都是用柚子汁配生蠔，很少會用中國茶作配搭&#8230;.. 幽幽的茉莉茶香，把那海水味蓋著，味道清新。而 「Salmon Tartar」 配 Cream Cheese 亦不俗，再用紫菜包著吃，有點像日式居酒屋的菜式。另外，用「鰹魚湯煮溫泉蛋」，烹調時間火喉拿揑得剛剛好，蛋白是生的，而蛋黃卻是熟的，再加上鰹魚湯的鮮味&#8230; Oishii~   相比之下，我不太欣賞的是那「南瓜檸檬草湯」，東南亞風味較重，有點像喝咖哩的感覺。「炸魚皮」 &#38; 「炸 Smelt」則太普通，雖然能做到不油膩，但相信很多華人食肆能做出更佳味道。 最後的甜品亦非常有誠意，一個擁有米香清淡雪糕，加一個 西柚Sorbet w/ Panna Cotta Custard 清新，倆者都不甜不膩，絕對時飯後佳品!! &#160; &#8230; </p><p><a class="more-link block-button" href="http://www.360taste.com/blog/?p=1960">Continue reading &#187;</a>]]></description>
